"I found that the guests do not come to restaurants for impersonal dishes but for ones with deep humanity based on the cultures. That reminded me of my roots. I was born in Savoie surrounded by mountains and grew up in a small village near the lake. We see cows when we walk on the road. I remember the odor of the hay. The blessing of the nature in the cycle of the seasons made my sensitivity refined."
